Salmon:
- 1 1/2 pound fresh salmon
- 1/2 lemon
- 1/4 teaspoon sea salt
- 1/8 teaspoon ground black pepper
Vegetable Mix:
- 1 teaspoon extra virgin coconut oil
- 3/4 cup small-diced red onion, 1 small onion
- 1 cups small-diced celery, 2 large stalks
- 1 red bell pepper, trimmed small- diced
- 1/4 cup minced fresh flat-leaf parsley
- 1/4 teaspoon hot sauce
- 1 1/2 teaspoons Italian seasoning mix
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
Cakes:
- 1 cup almond flour
- 2 teaspoons Dijon mustard
- 2 extra-large eggs, lightly beaten
- 1 tablespoon extra virgin coconut oil, divided
Toppings:
- 1 Avocado, pitted and mashed
- 1 tablespoon chopped parsley
